Settling the night takes days, and by then the money is already spent.
A bottle goes to the table and never reaches the tab. The Shadows cross POS tickets against the bottles that left the bar.
Payment follows a list, a sale or a deposit, and sometimes the three versions disagree. The Shadows cross bookings, spend and payments against each promoter's commission rule.
A table agrees to a minimum spend and ends below it without anyone noticing in time. The Shadows compare, table by table, spend against the agreed minimum.
Extra product gets opened and the line at the door or the bar drives customers away. The Shadows compare what was consumed against what was sold and log the longest waits.

No. Bar Eye counts bottles and the line in aggregate, without identifying people. A gap is a signal to review, not proof of fraud.
Management and whoever leads sales. The agent calculates a draft with exceptions; no payment goes out until someone approves it.
